With each vintage, care is taken to maintain the inherent character of this famous estate. Grapes are not picked until they have reached full phenolic maturity - i.e. fully ripe seeds and skins, not just appropriate Brix. This practice, requiring attentiveness in the vineyard as harvest nears, ensures that the characteristic big-but-soft Stags' Leap structure is allowed to fully develop.
