|Other Details:||We have planted our vineyards with high quality in mind. The vineyards are at an average altitude of 700mt. Some of them are on the slopes of deep valleys facing northwest, enjoying an excellent summer breeze and shorter hours of sunshine, which is very good for slow maturation.
Furthermore, our hills are the first high hills facing the sea, which means more than average precipitation in winter (usually over 650mm) and rain as late as the beginning of May. Most winters we get some snow but hardly heavy falls.
In the summer our average daily temperatures are much lower than is customary at this latitude and we have a prevailing northwesterly breeze even on the hottest days. The nights are damp and cool, and the days are very dry (35% average relative humidity) which is excellent for mould prevention. Also the temperature difference between day and night averages 10 degrees centigrade and can be as low as 16 degrees centigrade during the months of ripening. This is very good for acidity and phenolic maturation.
Prof. Amos Hadas from the Vulcani Institute places our vineyards, microclimate wise, much further north than their actual location. The soil is clay and limestone with lots of stones and with a very good drainage, especially as all the vineyards are on sloping ground. It is an ideal "wine country" soil, very similar to some of the best vineyards in the world.
